Ajara Ghansal is a legendary, indigenous aromatic rice variety grown primarily in the Ajara region of Kolhapur district, Maharashtra, India. Renowned for its delicate fragrance, fine grain, and distinct taste, it holds a prestigious place in Maharashtrian culinary heritage.

In recognition of its unique regional qualities and historical lineage, Ajara Ghansal was granted a Geographical Indication (GI) Tag in 2016.
